Comb Honey

We will soon have comb and chunk honey! The wax is white and tender. It is top quality comb honey. When surrounded by the light honey, it is a beautiful sight!

Comb Honey is the most natural form of honey.  It is placed there by the bees in comb built by the bees. Comb honey is sealed in the cell by the bees with a wax capping and is not exposed to heat, or filtering of any sort.  The best comb honey is made during strong nectar flows combined with warm days and nights. This creates the ideal conditions for building the best quality, light, and delicate comb.
     In the center photo below, you can see the difference between different hives of bees.  Some bees will fill the cells with honey and cap it with wax without leaving an air space between the honey and capping. (Left honeycomb). Bees that leave an air space between the honey and cap create a comb with a whiter appearance. This can vary by race of honeybee or even from hive to hive.  The color of the wax also can vary with the time it is in the hive. The more the bees track over it, the darker it can get. That's why quick production of comb in a strong nectar flow creates the most beautiful comb honey.
